I like brownies but I can often be disappointed by them.  The ones that I have found to be the best have been made by independent bakeries or patisseries.  Until a month ago it is not something that I had attempted to bake myself.  My first attempt wasn’t too bad, they had the brownie top, but inside they were a bit on the dry side.  For a recent family get together I had another attempt.  Let me present my chocolate caramel brownies.

My three nephews like chocolate and so we always make sure there is a chocolate dessert for them.  I knew they would give me an honest review.  Eating two pieces and saying “they’re ok!” was a good enough review for me.  My middle nephew even asked for the recipe for his home economics class.  Which reminds me I didn’t get a piece!

I based these on Paul Hollywood’s chocolate brownie recipe from How to Bake. These are extremely chocolatey and indulgent.  If you want dainty pieces then the recipe can make 16, but I prefer a more substantial brownie and made 10.

Chocolate Caramel Brownies (2)

Ingredients

100g salted butter
200g quality dark chocolate
204g Glaxay caramel 
4 medium eggs
250g caster sugar
100g plain flour
1 tsp baking powder
30g unsweetened coco powder
Icing sugar for dusting

Method
Heat the oven to 180C
Line a 20cm sqaure baking tin with baking paper
Place the butter and broken dark chocolate in a heatproof bowl and melt together over a pan of simmering water or in the microwave.  Leave to cool slightly
Whisk the eggs and sugar together until the mixture is pale and thick so that is holds a trail when the beaters are lifted
Carefully fold the chocolate mixture into the whisked eg mixture.  Sift the flour, baking powder and coco together over mixture and gently fold these in.

Pour the mixture into the baking tin

Break each piece of Galaxy caramel chocolate in half then add half the bar into the mixture 
Bake for 25 – 30 minutes – at roughly 20 minutes add the remaining Galaxy caramel chocolate into the mixture
Continue to bake until nicely crusted and soft in the middle
Serve warm or cold – either way they are fabulous with a spoonful of vanilla cream
